Palm oil is an edible vegetable oil derived from the reddish pulp of the fruit of the oil palms (not to be confused with palm kernel oil which renders a clear oil derived from the seed of the same fruit)

Qualities: Unrefined red palm oil contains the highest amounts of vitamins A and E of any plant based oil and is known to be the only oil that has a perfect balance of both tocopherols and tocotrienols, which together compose the many unique forms of vitamin E. The dark orange color comes from carotenes, such as alpha-carotene and beta-carotene (vitamin A), and may contain up to 30 times more vitamin A-producing carotenes than carrots.
Pure red palm oil has has a very distinctive taste and odor and is in a semi-solid state at room temperature. It is sometimes prone to phase separation, since its typical composition is approximately 50% saturated fatty acids, 40% mono-unsaturated fatty acids, and 10% polyunsaturated fatty acids. Some consider red palm oil one of the world’s healthiest oils as it contains no trans fatty acids or cholesterol.
Common use: Red palm oil is suitable for cooking many different dishes including stews and soups. It is also ideal for frying, making sauces and dressings. To preserve the highest nutrient content of red palm oil, it is best to add the oil to dishes towards the end of cooking. It has an intense bright red color which makes it desirable and defines the taste and appearance of the dishes in which it has been used. Red palm oil possesses excellent cooking properties as it is more heat stable than other vegetable oils and imparts in foods and baked goods superior taste, texture, and quality.
Storage: Red palm oil is resistant to rancidity due to its saturated fat content and high antioxidant content. Store at room temperature or cooled depending on what consistency you prefer. Its melting point is roughly 24°C or 75°F.
