Production: Garlic is a close relative to the onion, shallot, leek and chive. It is native to Central Asia and northeastern Iran, but is now grown all over the world. The plant sends up hollow leaves from the underground bulb. The bulb is divided into many fleshy cloves that are separated by a papery husk.
Qualities: Garlic is one of the most popular seasonings of all time and has an intense, recognizable flavour and fragrance. All parts of the plant may be used in cooking, though the bulb is the most prized and most commonly used part of the plant in culinary and medicinal applications.
