Description: Schisandra berries, also known as "wu-wei-zi" or "five flavor fruit," are recognized for their unique combination of sour, sweet, salty, bitter, and pungent taste notes. Native to Northern China, Russia, and parts of Korea, Schisandra has a long history of traditional use and is also valued as an ornamental climbing vine due to its lush foliage and bright red berry clusters.
Processing: The berries are harvested when fully ripe and then dried to preserve their flavor and quality. These dried berries are suitable for a variety of culinary and herbal preparations.
Suggested Use: Schisandra berries can be steeped into teas or decoctions by gently simmering. They may also be infused into fruit juices or used in tinctures and syrups. A common preparation includes soaking 1/2 cup of dried berries in a gallon of dark fruit juice for 24 hours, then straining. For a syrup, the berries can be soaked in vegetable glycerin for several weeks.
Storage: Keep in a cool, dry, and dark place in an airtight container to preserve freshness.

Schisandra berries and how I use them.
I was introduced to schisandra berries through work with a doctor of naturopathy in Burlington, Ontario, who recommended them as one ingredient in an adaptogenic tea. When I bought them through Gentle Rain, an organic foods store in Stratford, Ontario, and when I tasted them when a Harmonic Arts representative introduced them at an organic foods store I worked at in Victoria, what I particularly noticed and appreciated about them was their nutty texture and spicy taste. In both cases, the seeds were dry and smooth, without the whole dried berry fruit around them. I came to use them as one of the spices I added when I ground up coffee beans, along with cardamon pods, whole allspice, and cinnamon stick, to make a spiced cafe mocha, with cocoa powder, organic cane sugar, and cashew milk. The whole berries I recently bought from OM foods, with the dried fruit casing around the seeds, adds a pleasant sour quality to the spicy. The spice mix adds a rich flavour to fresh brewed coffee on its own, even without the cafe mocha preparation. Recently I decided to grind up the spice mix with oat flakes as an addition to the gluten free flour I used to make a recipe of pancakes, and again, the spices, including the whole schisandra berries, made a lovely addition to the pancake experience, which I had cooked in a hot frying pan with grapeseed oil and butter, and served with a rich mocha yogurt and maple syrup.
