Botanical name: Elaeis guineensis
Our palm oil is certified Identity Preserved (IP) by the Round Table on Sustainable Palm Oil (RSPO), the most stringent supply chain certification available. This ensures our palm oil is kept separate throughout the supply chain for true traceability. Our palm products are produced with IBD EcoSocial Fair Trade certification which addresses critical points for environmental, social and economic impact.
Production: The oil is extracted from the pulp of the palm tree fruit. Palm trees are organically cultivated and the oil is physically extracted (by mechanical pressing) without the use of solvents or other chemical substances. Refining of the oil utilizes the USDA NOP-approved processing aids citric acid and bleaching earth. These are not considered additives since they are removed during processing. The palm oil is fractionated through successive steps of cooling and filtration and then the fractions are recombined in the desired proportions to make our shortening.
Qualities: Palm shortening is palm oil that has some of its unsaturated fats removed, giving it a very firm texture and high melting point of about 36°C or 97°F making it therefore very shelf stable. It is however NOT hydrogenated and contains NO trans fats!
Common use: palm shortening is great for deep-fat frying and baking, and is not prone to rancidity. Since it has been separated from some of the unsaturated portion of the oil, it is colorless and odorless, and will not affect the taste of foods like red or virgin palm oil does.
