Ingredients: 90%wholegrain heirloom Pitic (soft wheat) flour
Production: Many of the heirloom grains have not been grown for over 100 years or have become almost extinct before Ben and Claudia at Treasure Life Farms decided to follow their commitment to biodiversity and sustainability. On their certified organic farm, they cultivate their crops in the rich alluvial soil in a "rotation and fallow" method, carefully rotating seedbeds, ensuring sufficient nutrient buildup through cover cropping.
Grains are allowed to ripen at their own pace and are then harvested, cleaned, and stored in wooden granaries on their farm - all contributing to superior taste and nutritional value. Flours are freshly milled in small batches on a centrifugal mill which pulverizes the grains so finely that it requires no sifting and without any temperature increase, preserving optimal nutrient density of the flour. This pastry flour has been minimally sifted in order to obtain a lighter quality flour.
Qualities: this organic, high-quality gluten heirloom flour, is rich in soluble and insoluble fiber, protein, complex carbohydrates, vitamins, minerals, and phytonutrients:
- High-quality gluten: not all gluten is created equal. Since most people have been exposed to GMO gluten but not been sensitized to the ancient genetic composition of heirloom grains, even gluten sensitive individuals often have excellent tolerance to these heirloom grains.
- Heirloom or heritage plant varieties are open-pollinated varieties that have been cultivated and passed down sometimes for thousands of years. They have evolved over time by natural or human selection exhibiting superior taste and complex aromas as well as a diverse mineral profile and higher vitamin contents. They also play a crucial role in protecting our continued food supply through preserving genetic diversity.
Common use: This pastry flour makes wonderfully tender baked goods. Use it for pie crusts, pastries, biscuits, scones, pancakes, brownies, cookies, and cakes. It is suitable for any recipe that calls for baking soda or baking powder.

This flour "behaves" very well in my sourdough. It is able to raise even egg/butter sourdough. I love baking with it.
Hi Scott: I mis-ordered the last batch; I wanted 2 bags of the Heirloom Organic Whole Wheat flour(whole grain multipurpose wheat flour) Can we substitute the pastry flour for the white wheat flour? We have been having good luck: we have used 300 gas of the white wheat flour, unbleached, 130 of spelt (which is good ground fresh) and 30 grams of kamut. Bread is light and soft. It is proofed in a bread maker and then proofed and let rise and then baked in a cast iron pot, so the question is, can I substitute the pastry flour for the white unbleached flour.I will order another two bags (5 lbs each) and and the organic whole wheat bread later this week.Thanks.Don Grenier
I used this flour to make pie pastry. It was the first time in 8 years that I got to enjoy “true pumpkin pie” at Thanksgiving. I am beyond gluten intolerant and I didn’t react to this flour. It was truly a miracle for me!!!
Works well, tastes wonderful
The flour is delicious great - fresh and tasty, but the bag it came in was sealed shut so the re-sealable component was useless.
