Botanical Name: Piper nigrum
Origin: India / Sri Lanka
Production: White peppercorns are from the same plant as black and green peppercorns, but they are hulled so that just the inner fruit remains. In order to expose the fruit, they are soaked in a brine and the skin is rubbed off.
Qualities: White pepper has a milder, more delicate, and slightly musky flavour compared to black pepper.
Common Use: The hulled peppercorn is useful for adding a peppery note to light-coloured sauces and dishes without adding black colour. White pepper is popular in Chinese, Thai, and European cuisines.
Storage: Store in a cool, dry, dark place in a sealed container.

I don't use white pepper a lot, but its nice to have on hand for those few recipes that call for it. LOVE that I can get such a great selection of organic spices and other foods from OM. Can't live without them. And Canadian too!

I'm really thrilled to have found these whole white peppercorns. They're so fresh and the flavour is both rich and nuanced. It came just in time for wild mushroom season and has combined beautifully with chanterelles and pine mushrooms!
