Production: grinding of dried corn kernels (maize) into a meal (coarse flour)
Common use: Cornmeal is a common staple around the globe. Boiled cornmeal is called Polenta in Italy and is a traditional dish and bread substitute in Romania. It is also is traditionally used on pizza crusts as a slip, or release agent to allow the formed dough piece (crust) to be easily slid from the pizza or oven peel onto the deck of the oven for baking

Cornbread
I bake cornbread…..been looking for a fine cornmeal, which has been challenging to find believe it or not. So very pleased with this organic cornmeal…..
Yummy!
Absolutely perfect. Some organic cornmeal is so inconsistent that it's hard to get all parts cooked.Not this one. It makes the most velvety heavenly polenta with just the right tooth.

I'm sold
I was worried it would be too grainy, but it made great cornbread.I did soak it for 20 minutes in the liquid of the recipe.
