Production: This cocoa is made from sustainably sourced, carefully selected raw materials to provide premium quality, consistency, and flavour.
Qualities: Alkalized cocoa, also known as "Dutched" cocoa or "European style", is washed with a potassium carbonate solution that neutralizes cocoa's naturally high acidity levels. Alkalized cocoa is a bit darker in color and has a mellow flavour that is often associated with earthy, woodsy flavours.
Common Use: Because alkalized cocoa isn't acidic, it doesn't react with leaveners like baking soda, so recipes with alkalized cocoa are usually leavened by baking powder, which has a neutral pH. This cocoa is great in baking and any other recipes or mixtures that call for cocoa - like a great cup of hot chocolate!

Every batch of this cocoa has always been the best of any around. But this latest batch somehow topped them all! So glad I got the 5 lb rather then just one or 2 of the 1lb pkgs so we can enjoy this lot longer. I ended up using less to flavour our snack yesterday, which was perfect for so late in the evening when too much can make some family members eating cocoa that late feel a bit jittery. Even with less, it still tasted rich and full, and the colour was dark and as delicious to look at, as it was to eat.
Rich and complex
We buy this in the five-pound bags and it makes chocolate cakes wonderfully interesting. I also use it in hot chocolate, and the flavours are interesting enough that I even appreciate it without any sweetener. Just this cocoa powder, a generous shaking of cinnamon (also from OM Foods), a respectable pinch of salt, and just a tiny bit of cayenne powder.
