Botanical name: Cocos nucifera
Ingredients: organic coconut milk powder, organic maltodextrin (derived from organic tapioca)
Origin: Sri Lanka
Qualities: Coconut milk powder has the scent of a coconut and a slightly sweet taste. It is produced from the creamy, rich liquid made from the meat of mature coconuts (not the liquid that can be drained out from a coconut that has been punctured). It is high in saturated fat, mainly lauric acid (also found in mother's milk), along with Vitamins B, C, and E and a multitude of antioxidants. Contains 42-52% fat.
Common Use: Coconut milk powder can be made into coconut milk by simply adding water. Adjust the powder to water ratio depending on the richness of the desired milk. This powder is ideal for recipes that call for coconut milk, such as curries, puddings, baking, ice cream, and it can be added to beverages like smoothies, coffee, or hot chocolate.
Storage: This product tends to clump when compressed or exposed to cold temperatures because of the high-fat content. Store in an airtight container in a dark, cool, and dry location, or in the refrigerator or freezer (well sealed) if buying a quantity that will take more than a month to consume. Clumping is normal and easy to break up when brought to room temperature or dissolved in warm water.

I actually use this powder for my powdered clay facial cleanser that I sell. It makes for a milky gentle exfoliant and adds a creamy lather with a hint of coconut aroma, making my cleanser a delightful and delicate product! Thank you for the quality AND the price!

It makes me happy to buy a big (sturdy, reusable) plastic bag rather than a zillion steel cans. It's a little fiddly to mix up for Thai curry (I usually mix this powder with coconut butter and/or unrefined coconut oil in a high-powered blender), and it's slightly grainy, but hey, less packaging is good. It's also fantastic in smoothies and piña coladas, where you don't notice the graininess at all. I'm less of a fan of it in coffee.
