Origin: Peru
Qualities: Purple corn (maize morado in Spanish) belongs to the same species as yellow table corn but mutated to contain some of the deepest shades of purple found in nature known as "anthocyanins" which native South Americans have been using to color their food and drinks for centuries.
Some research has shown that purple corn contains cell-protecting antioxidants with the ability to inhibit carcinogen-induced tumors in rats. Even though many plant-derived substances are believed to show such properties, few have also demonstrated anti-inflammatory capabilities and the potential to help prevent obesity and diabetes.
Common Use: Purple Corn powder can be incorporated into flour mixes to make colorful pancakes, delicious tortillas, pizza crust, gluten-free pasta, or added to protein powders, smoothies, and is a great addition to eating the rainbow!
Besides coloring their food and beverages with purple corn, the people of the Peruvian Andes are known to make a fermented drink from the kernels which they call chicha morada.
Storage: Store in a cool, dry, dark place in an airtight container. Refrigeration not required.

I made healthy polenta
Upon opening the bag, the purple corn smelled a lot like protein powder.I cook it in 4:1 water:purple corn meal with LOTS of shallots and fresh garlic, and dried basil as a spice ingredient is a nice complimentary touch. It takes a long time to cook, about 40 minutes. A whisk is required and the purGarnish of avocado cilantro, parmesan compliments the purple polenta well. I consider it to be rather tasteless. It has the texture of starch. It's very starchy and not at all sweet like yellow corn.I have yet to try baking purple corn bread with it.I seek this item out for it's astounding nutritional benefits, and to have something different to eat. Because it pairs so well with lots of garlic and onion, I consider this food to be even healthier. I sometimes make savory oatmeal with garlic and onion, but that combo doesn't fall as perfectly into place as purple corn + shallots + garlic does. It just works.I'd like to try adding roasted mushrooms + thyme on top, with the avocado. Considering it could also pair so well with mushrooms, this food item starts looking like the #1 healthiest meal base in the entire kitchen.

I actually use this in a bath recipe for soaking in the tub and it turns the bathwater a deep purple colour! So fun, and it's natural which is the best part!!
