I'm not a pasta expert, but I do notice when the texture/taste of alternative pastas are different than wheat pasta, and often don't like them. This one is whole-grainy - denser maybe than white flour pasta - but has a nice texture. Clean bite, not gummy. Taste is neutral. It is possible to overcook the lentil pasta and get a mushier result. The color fades with cooking, BTW. It also feels like a healthy meal, at least for my body. No carb overload feeling.
