QUINOA PANCAKE MIX

Ingredients: Rice*, quinoa*, cassava starch, sugar*, cream of tartar, baking soda, vanilla essence, and salt. (*)
Origin: Bolivia
Cooking instructions (yields 4-6 pancakes):
- In a small mixing bowl, mix one large egg (or flax mixture: mix 1-2 tbsp milled flaxseed with 3-4 tbsp water, stir until gelatinous) with 1 cup milk or milk alternative (soy, rice, almond or hemp). Slowly mix wet ingredients to 1 cup of dry pancake mix avoiding any clumps. Let the mix rest for three minutes.
- Optional: 1/4 tsp pure vanilla extract or add your favorite berries or chocolate chips to uncooked prepared mix.
- For thinner pancakes use more milk, for thicker pancakes use less milk.
- Heat pancake pan over medium-high heat. Once pan is hot, reduce to medium heat and add coconut oil or butter to the pan.
- Pour pancake mixture onto the heated pan (about 1/2 cup), flip the pancake when bubbles start to show and edges begin to turn golden brown. Enjoy!

Makes Gluten Free easier!
Our family has gone gluten free and this pancake mix has been a hit for weekend breakfasts. So easy to mix just needing eggs and milk (or water in a pinch). I love the nutty quinoa flavour and the consistency of the cooked pancake is kinda spongy and firm which I like compared to some other GF mixes that are crumbly when cooked.
Too sweet
Mixing it with OM org. Oat Flour - otherwise too sweet for some reason / ingredient.
Meh
Didn’t like texture; taste was ok. Bought for convenience but rather make mine from scratch. Disappointed. Wouldn’t buy again.
Delicious!
I love these pancakes! I cook them in avacado oil in order to get a bit of a crispy effect. They are so good that I don't use syrup. I eat them plain.
Quinoa Pancake mix
I love it! Just beat 2 eggs, and some milk or yogurt , diluted, add the mix until the right consistency of pancakes, put in oats or blueberries, and cook!
